XPERIMENT OF THE BEST INGREDIENT
TO TENDERIZE STEAK
Steak is one of the most popular dishes around the world. Many people
spend so much money just to eat it. The texture of the meat that melts in your
mouth and rich flavor makes steak very popular among meat lovers. However,
some of us can’t afford the crazily expensive beef. Therefore, we conduct an
experiment to make the steak more tender without buying high quality beef. It’s
hoped that all of us can enjoy tender meat without buying such expensive
meat.This research uses an experimental method. 1 control product which is a
steak we didn’t marinated with the tendering ingredient and 3 other treatment
products, namely using honey that have protease to break down protein also
have pineapple and baking soda. We test 1-panelist from Guilin Tourism
University to find out if there is any difference between the control product and
the treatment product. The result obtained through the difference comparison
the author made there were significant differences in tenderness, flavor, and
texture. This is proven by the significant value more than 1.0 in tenderness and
more than 0.5 in flavor with pineapple become the best ingredient to tenderize a steak. The result of the meat tenderizer test for pineapple, honey, and baking soda were 10 panelists from Guilin Tourism University.
