In this research, the author was attempted and conducted to investigate and observe the needs and wants of Indonesian people in culinary industry. By learning on developing a new product, the author made an innovation fusion food based on Indonesian traditional cuisine from the western and eastern part of Indonesia and implement it with European cooking technic.
